Origin and processing of the coffee
The coffee comes from the family-run Casa de Piedra farm, situated in the mountainous Tarrazú region of Costa Rica. The farm is run by Gerardo Arias Camacho – a grower with over 30 years’ experience – who, together with his daughter, is developing production by exploring new varieties and the potential of the terroir.
Cultivation at an altitude of 1,600–1,700 metres above sea level promotes the slow ripening of the coffee cherries, resulting in greater complexity and concentration of flavour. The beans of the Red Catuai – Caturra variety, a hybrid of Mundo Novo and Caturra, are distinguished by high productivity and a harmonious sensory profile.
The honey process involves drying the beans whilst retaining some of the pulp. After approximately 48 hours of fermentation, the African-style drying process begins, continuing until a moisture content of 10–12% is reached. This method enhances the coffee’s sweetness, body and aromatic depth.
The light roast level has been selected to highlight the natural sensory profile and maintain a balance between sweetness and acidity.
