Product description
Peru El Rejo SIDRA coffee comes from the high-altitude El Rejo farm in the San José del Alto region. The farm, run by José Rivera – co-founder of Origin Coffee Lab – operates on a quality-focused model, centred on precise selection and control of the production process. The beans ripen in the shade of banana trees, which influences their slow development and sensory complexity.
The washed processing method has been enhanced with a fermentation stage, both in the whole fruit (cherry) and in the mucilage, carried out in ceramic tanks. The beans are then thoroughly washed and dried on raised beds in intense sunlight. This method yields an exceptionally clear brew whilst retaining its aromatic intensity.
A light roast profile, highlights the natural acidity, floral notes and fruity character of the Sidra variety, whilst preserving its elegant structure.
