Dripper Deep27 CAFEC – the story behind its creation

The predecessor to the Deep27 model was the Deep45 dripper, designed to increase filtration efficiency by narrowing the bottom angle to 45°. This design worked perfectly for brewing 3–7 cups of coffee, but was not optimal for a single serving.

Numerous enquiries and suggestions from coffee lovers in Japan and around the world prompted the creation of a dripper ideal for a single cup. This is how CAFEC Deep27 was created – a dripper that ensures deep filtration, precise extraction and full flavour in a single serving of coffee.

This solution is complemented by the dedicated Abaca+ Deep27 filter, designed specifically for fast and stable water flow.

Why Deep27?

We conducted intensive testing and research over a period of five years to develop the ideal drip angle for brewing a single cup of coffee. We focused on two key elements:

1. The right filter layer

A single portion of ground coffee creates a sufficient sediment layer, which is essential for stable and repeatable extraction.

2. The ideal CAFEC extraction speed

The speed at which the water is poured and the rate at which the brew flows out are perfectly synchronised, allowing maximum aroma to be extracted without bitterness.

The result of our research was the development of a 27° angle, which significantly increases the sweetness, depth and complexity of flavour in a single cup of coffee.

CAFEC Deep27 dripper – key features

• Precisely designed ribs- Their height subtly changes towards the bottom, maintaining a constant flow rate. The air space between the filter and the dripper generates strong osmotic pressure inside the device.
• Properly fitted bottom hole- Keeps the filter and coffee in place, preventing damage to the paper under the weight of wet coffee in the second phase of brewing, while not slowing down the flow.
• Curved dripper base- Increases the distance from the server so that the filter tip does not come into contact with the finished brew, improving flavour clarity.

Abaca+ Deep27 Filter

The Abaca+ Deep27 filter creates a deep filter layer and ensures smooth, controlled water flow. This is possible thanks to:

• reduced crepe height on both sides of the paper,
• reduced distance between crepes, which increases the total filtration area,
• uniform paper structure, which stabilises flow and guarantees consistent flavour.

The CAFEC brand – Japanese precision

The CAFEC brand was launched as an original product of Sanyo Sangyo.

Sanyo Sangyo Co., Ltd has been operating continuously since 1973 as a manufacturer of coffee accessories. The company was the first in the world to develop a cone-shaped paper filter, which is still supplied to markets in Japan and around the world today.

Founder and CEO Shigeji Nakatsuka has many years of experience in roasting and alternative coffee brewing. His goal was to optimise paper filters for different degrees of roasting, resulting in CAFEC double-sided crepe filters that regulate water and air flow – ideal for light, medium and dark roasted coffees.
